OUR WINE MAKING PHILOSOPHY

At Bittern Estate, our mission is to craft the most interesting and balanced wines by tailoring our winemaking techniques to each batch of fruit. We carefully adjust our processes to enhance complexity and flavor balance, always keeping in mind the consumer’s expectations for varietal and regional character.

Our exploration of unusual varieties presents a unique challenge: identifying and highlighting their true varietal traits, and then crafting a style that accurately represents the variety, vineyard, and region. Bittern Estate’s international selection of grape varieties allows us to produce a truly exceptional range of wines.

Although Bittern Estate is a relatively new brand, our vineyard is now mature, and our team comprises highly skilled and experienced professionals in horticulture, winemaking, and the broader wine industry. This expertise enables us to create wines of outstanding quality and distinctive varietal character.

2016 Bittern Estate Chardonnay

Chardonnay

Made from fully estate-grown fruit, our Bittern Estate Chardonnay is pale straw in colour and has the intense aromas of melons and spicy citrus. The palate is long and complex with toasty oak and butterscotch finish.

Pinot Noir

$35

Brick red in colour, our Pinot Noir has a rich nose of black cherries and spicy plums, a savoury palate with charry vanilla oak and a full body. The finish is spicy and long with hints of cloves and dark chocolate to round off the palate.
